Plant-Based Chick’n Kati Rolls in Brooklyn
Who remembers your pre plant-based days of kickin’ it with The Kati Roll Company and jonesing big for the OG iconic unda chicken roll? THAT is what inspired my wanting to create a 100% plant-based unda chicken roll.
Kati roll culture is so big in NYC and sure, places offer vegan riffs but it’s always in a roti, not a paratha, and the filling is typically chickpea. But what’s a vegan gal to do when she has a hankering for a paratha roll, with said paratha in plant-based egg and filled with spiced meat(i)? I’ll tell ya what she does. She cooks it for herself and then cooks it for her community to see if it satisfies them as well.
I’m using Meati classic cutlets for my chick’n. Meati is a brand of plant-based “chicken cuts” made from mushroom root, also known as mycelium.
Meati chick’n gets the masala treatment and is stuffed in a plant-based egg-enrobed paratha for a flavor-packed roll!
