Sure, the Mahatma may have told you to be the change you wish to see in the world. But the Masala is telling you that to be that change, you gotta fuel and rest.
Captured here is my plant-based unda bhurji. Unda means egg and bhurji is a scramble. Unda bhurji, at its simplest explanation, is spiced scrambled eggs. Another popular bhurji is paneer bhurji which is scrambled spiced paneer (curdled milk).
Different households and street vendors in India make it in various ways with various vegetables, herbs, and spices mixed in their bhurji. Same goes for here in NYC.
Many popular South-Asian restaurants in NYC– such as Desi Galli, Masala Times, Paratha Junction, and Kailash Parbat to name a few– offer their own take on bhurji, made from egg or paneer, or both. But plant-based bhurji? Notsomuch. But I’m tryna change that.
I use different base ingredients for my protein-packed plant-based bhurji. My usual go-to’s are tofu and JustEgg, but I’ve branched out to using pumfu (tofu made from pumpkin seeds) and ackee as well.
