You know when you’re dining out and you’re asked if you want a side of fries with that? Well, at Masala Merrynade the fries is the THAT. It ain’t no side piece. It’s the main attraction. A meal in itself, they’re all SO loaded. No small fry/side fry energy here y’all!This evening marked the first out of nine days of #navratri so for nine evenings, this one included, I’ll be having an all fry-menu. Which has nothing to do with Navratri. However, I figure it’s good pre-game, post Garba, peak aloo comfort food. It’s celebration food. Maybe not traditional but celebratory nonetheless!What other toppings would you like to see? Thinking of bringing the magic masala fries back and adding French fries makhani to the menu. My Nona (dad) use to ceremoniously make goat meat with potato curry; it was ceremonious because it was the only thing he cooked, cooked well, and that, too, he would only make for special occasions or for special guests. It was a whole mood.When he would make it, I’d sit at our countertop and watch him do so, and be regaled with his stories chronicling life in Odisha, how he never had to cook before coming to the US, how he had to teach himself how to cook, and how he became a goat meat making expert. It was always the same handful of stories. But still so, each retelling always unveiled a new detail or tidbit about him, or our family, or our culture, of all the things, the *meat of life* if you will.Even then, even before I “turned” vegan, I never liked goat curry so much as I enjoyed bonding with my dad as he’d cook it and, gastronomically, how the savory meaty jhol, or gravy, would permeate the chunks of potato.He doesn’t make it anymore because he’s taken on a vegetarian lifestyle. But when I presented him with @_offbeast steaks and said let’s make this taste like your famous goat curry recipe, well, NONA CAME THROUGH!It has all the oomph: tender (plant-based) meat which is delicately stewed with caramelized onions, garam masala, black cardamon, cinnamon and so much warm savoriness, and then all THAT hugs up on hand-cut crinkle cut fries, the jhol nestled between the crinkles and oooh weeee, it all just works. Bold Indian flavors over a bed of fries. Meat & potato. A spin on a family recipe. It👏🏾Just👏🏾Works👏🏾Lemme ask y’all, would you order this in if I were to make it available on my delivery menu?Anyone out there miss these type of heirloom recipes so to speak?
